Lessons Learned:
-How to peel and cut a mango.-How to make yumm-o enchilada sauce.
Today Sis.Wortley taught me about mango's. When you pick them out, you want to look for the ones with green, yellow, and red. Also to know when they are ripe, you want them to be just a little soft. When you peel them, you have two options. The first being to peel it like a potato and the other is to cut it up them cut the peel off. We tried it both ways. The first gets more flesh and the second is easier and faster. Oh - They are slippery little buggers! We made a mango dessert. It was mango's with fresh mint and some type of flavoring (it was a licorice flavor, however I would prefer something sweeter) and whip cream, like a trifle.
Anywho... We made enchilada sauce from scratch! It was dried chilies, onion and tomato bullion and chicken broth. We added a hotter pepper, cant remember what it was though. You let it all boil until the chilies are soft, blend it until it's smooth then strain it. Chilies stain everything and you cant get it out. It will stain your blender if it's got any white plastic... just so you know. It's pretty yummy. We fried some corn tortillas and fried an egg for the top with cheese. Yumm-o!!
It was a good lesson! She also made refried beans. Soaked them, then cooked them... they were amazing!
